Salmon Chipotle

Serves 4

Ingredients:

4 - 8 oz. Salmon Filets
1 cup Cream
6 oz  Chardonnay
3 oz  Sun dried Tomatoes
6 Basil Leaves, julienned
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon Chipotle
1 oz canola/olive oil

 

Method:

Put oil in pan, sauté salmon filet with salt and pepper on one side.

Turn over salmon filet and bake for 10 minutes at 500 degrees F. Remove salmon to new plate.

Pour wine, cream and the remaining ingredients in the pan for sauce.  Boil to reduce sauce until desired reduction has been reached.

To serve:  Pour a little sauce on plate and place salmon. Pour a bit more sauce on top and garnish.
